TEA ICE-CREAMS

Recipe 1

Ingredients:

  • ½ glass of sugar
  • 2tbsp powder sugar (for egg whites)
  • 2 flat tbsp dry aromatized tea
  • 2 glasses of full-fat milk
  • 1 glass of cream 
  • a small vanilla bean 
  • 4 eggs 
  • grated chocolate
½ glass of sugar

Preparation:

Vanilla should be divided into pieces and boiled with milk. Pour boiling milk over tea, then cover the dish and leave it for ten minutes for brewing. Strain the infusion through a very dense sieve. Grind egg yolks with sugar until light and fluffy, slowly mix the mixture with cooled milk tea constantly whipping. Put the dish onto a pot with hot water and whip until the dough thickens. Then put the mixture into a bigger dish and leave aside in a cool place. Whip the cream till fluffy; whip egg whites with sugar. Add whipped cream and egg whites to the milk and egg mixture. Stir the ingredients very gently but carefully with a wooden spoon. Put the mixture to bowls and then to the freezer. Ice-creams taste best on the following day. Sprinkle portions with grated chocolate.


Recipe 2

Ingredients:

  • 2 glasses of black tea
  • ½ glass of water
  • ½l cream
  • 3 oranges, juice only
  • 2 egg yolks 
  • sugar (at your discretion)

Preparation:

Pour boiling water over tea. Put aside for 3 minutes in order to obtain an infusion and strain it. Mix the infusion with cream and orange juice. Grind two egg yolks with sugar and mix with tea infusion, cream and juice. Put the mixture to bowls and put them into the freezer. Serve it in high glasses, decorated with cream. If you want, sprinkle the ice-creams with dried coconut or pour with caramel.
